2 large flatbreads (store-bought or homemade)

2 cups cooked chicken, shredded

1 cup BBQ sauce (use your favorite variety)

1 cup shredded mozzarella cheese

½ cup red onion, thinly sliced

½ cup corn (fresh, canned, or frozen)

1 avocado, sliced

¼ cup fresh cilantro, chopped

1 tablespoon olive oil

Salt and pepper, to taste

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

    Prepare Chicken: In a medium bowl, combine the shredded cooked chicken and BBQ sauce. Mix until the chicken is evenly coated. Adjust seasoning with salt and pepper as needed.

      Brush Flatbreads: Lightly brush one side of each flatbread with olive oil; this will help them crisp up on the grill.

        Grill Flatbreads: Place the flatbreads, oiled side down, on the preheated grill. Grill for about 2-3 minutes or until they have nice grill marks and begin to puff up. Flip them over.

          Add Toppings: On the flipped side, layer the BBQ chicken mixture, shredded mozzarella, sliced red onion, and corn evenly over the flatbreads. Close the grill lid and cook for another 3-5 minutes, or until the cheese melts and the toppings are bubbly.

            Finish and Serve: Once done, remove the flatbreads from the grill. Top each with sliced avocado and chopped cilantro. Slice into pieces and serve immediately while hot.
