Grilled Chicken and Peach Skewers

1 lb chicken breast, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1/4 cup olive oil

2 tablespoons balsamic vinegar

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

8 wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions
 

Prepare Marinade: In a medium bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, thyme, salt, and pepper.

    Marinate Chicken: Add the cubed chicken breast to the bowl and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.

      Preheat Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

        Assemble Skewers: Thread the marinated chicken, peach wedges, and red bell pepper pieces onto the skewers, alternating between the ingredients.

          Grill Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. The peaches should be tender and slightly caramelized.

            Serve: Remove from the grill and let rest for a couple of minutes. Serve hot, drizzled with any remaining marinade if desired, or with a side of your favorite dipping sauce.
