1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lime

For the Tacos:

8 small corn tortillas

1 cup diced red onion

1 cup chopped fresh cilantro

1 avocado, sliced

1 cup crumbled queso fresco (or feta cheese)

1 cup pico de gallo (store-bought or homemade)

Lime wedges, for serving

A drizzle of hot sauce (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, black pepper, and lime juice. Mix well.

      - Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

        Preheat the Grill:

          - Preheat your grill to medium-high heat (about 400°F or 200°C). You can also use a grill pan on the stove for indoors.

            Grill the Chicken:

              - Remove the chicken from the marinade and place it on the grill. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is slightly charred.

                - Once cooked, let the chicken rest for about 5 minutes before slicing it into thin strips.

                  Warm the Tortillas:
