Grilled Chicken Thighs

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

Juice and zest of 2 oranges

Juice and zest of 1 lemon

3 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, orange juice and zest, lemon juice and zest, minced garlic, smoked paprika, cumin, oregano, salt, and black pepper until well combined.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Preheat the Grill: When ready to cook, preheat your grill to medium-high heat (about 400°F/200°C). If using a charcoal grill, set up a two-zone cooking area with coals on one side.

        Grill the Chicken: Remove the chicken thighs from the marinade and let the excess drip off. Place them skin-side down on the grill. Close the lid and cook for about 6-8 minutes, or until the skin is crispy and has nice grill marks.
