2 ears of fresh sweet corn

1 ripe avocado

4 slices of whole-grain or sourdough bread

1/2 cup crumbled feta cheese

1 tablespoon olive oil

1 teaspoon lime juice

1/4 teaspoon red pepper flakes (optional)

Fresh cilantro or parsley, for garnish

Salt and pepper to taste

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Remove the husks and silk from the corn. Lightly brush them with olive oil and season with salt and pepper. Place the corn directly on the grill grates and cook, turning occasionally, until the kernels are charred and tender (about 10-15 minutes). Remove from the grill and let cool.

    Prepare the Avocado: While the corn is grilling, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lime juice, a pinch of salt, and mash the avocado to your desired consistency (smooth or chunky).

      Toast the Bread: Grill or toast the slices of bread until golden brown and crispy on the outside. If grilling, you can place them on the grill for a couple of minutes on each side.
