Ingredients

8 slices of sourdough bread

1 cup fig jam

8 ounces Brie cheese, sliced

4 ounces goat cheese, crumbled

4 tablespoons unsalted butter, softened

Fresh arugula or spinach (for garnish)

Optional: Balsamic glaze for drizzling

Instructions

Prepare the Bread: Start by spreading a thin layer of softened butter on one side of each slice of sourdough bread. This will create a golden crust while grilling.

Assemble the Sandwiches: On the non-buttered side of 4 bread slices, layer the following: spread about 2 tablespoons of fig jam, followed by a generous layer of sliced Brie cheese. Crumble the goat cheese over the Brie, and add a handful of fresh arugula or spinach for a peppery bite. Top each with another slice of bread (butter side out).

Grill the Sandwiches: Preheat a non-stick skillet or griddle over medium heat. Carefully place the sandwiches in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheeses have melted beautifully.

Serve: Remove the sandwiches from the skillet and let them cool for a minute. Slice in half, and drizzle with balsamic glaze if desired. Serve warm with any remaining arugula on the side.
