Grilled Peach & Chicken Caprese Melts

2 large boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

1 tablespoon olive oil

Salt and pepper to taste

4 slices of fresh mozzarella cheese

1 cup fresh basil leaves

1 cup arugula

4 slices of rustic bread (like ciabatta or sourdough)

Balsamic glaze, for drizzling

1 teaspoon garlic powder

1 teaspoon dried oregano

Prepare the Chicken: Season the chicken breasts with olive oil, garlic powder, oregano, salt, and pepper. Rub the mixture evenly over the chicken and let it marinate for at least 15 minutes.

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once done, let the chicken rest for a few minutes before slicing.

      Grill the Peaches: In the same grill or grill pan, place the peach halves cut side down. Grill for about 3-4 minutes until they get grill marks and soften slightly. Remove from heat and let cool before slicing.

        Assemble the Melts: On each slice of rustic bread, layer the sliced grilled chicken, mozzarella cheese, sliced grilled peaches, fresh basil, and arugula.

          Melt the Cheese: Preheat an oven to 400°F (200°C). Place the assembled melts onto a baking sheet and bake for about 5-7 minutes, or until the cheese is melted and bubbly.

            Finish with a Drizzle: Remove from the oven and drizzle with balsamic glaze. Slice in half and serve warm.
