Ingredients

2 ripe peaches, halved and pitted

4 slices of thick-cut sourdough bread

1 cup ricotta cheese

2 tablespoons honey (plus extra for drizzling)

1 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves for garnish

1 tablespoon olive oil

Balsamic glaze for drizzling (optional)

Instructions

Prepare the Peaches: Preheat your grill or grill pan over medium heat. Brush the cut sides of the peach halves with olive oil.

Grill the Peaches: Place the peaches cut side down on the grill. Grill for about 4-5 minutes until they have nice grill marks and are slightly softened. Remove from heat and let cool slightly.

Toast the Bread: While the peaches are grilling, place the sourdough slices on the grill. Toast each side for about 2-3 minutes until golden brown and crispy.

Make the Ricotta Mixture: In a mixing bowl, combine the ricotta cheese, honey, vanilla extract, and a pinch of salt. Mix until creamy and well-combined.

Assemble the Toasts: Spread a generous amount of the ricotta mixture on each toasted slice of sourdough. Top with the grilled peach halves.

Finishing Touches: Drizzle with additional honey and balsamic glaze (if using) for a sweet and tangy kick. Garnish with fresh mint leaves.

Serve & Enjoy: Serve immediately while the toast is warm and the peaches are still slightly caramelized.
