Grilled Portobello Burgers

4 large Portobello mushrooms, stems removed

2 tablespoons balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

4 whole grain burger buns

1 cup fresh spinach leaves

1 large tomato, sliced

1 small red onion, thinly sliced

½ cup goat cheese or vegan cheese (optional)

Avocado slices (optional)

Instructions
 

Prepare the Marinade: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, smoked paprika, salt, and pepper.

    Marinate the Mushrooms: Place the Portobello mushrooms in a shallow dish and pour the marinade over them. Make sure each mushroom is well coated. Let them marinate for at least 30 minutes, flipping halfway through.

      Preheat the Grill: Heat your grill or grill pan over medium heat. Ensure it's hot before you add the mushrooms for a nice sear.

        Grill the Mushrooms: Remove the mushrooms from the marinade and place them gill-side down on the grill. Grill for about 5-7 minutes, then flip and grill for another 5 minutes, or until they are tender and have nice grill marks.

          Toast the Buns: While the mushrooms are grilling, place the whole grain burger buns cut-side down on the grill for about 1-2 minutes, until they are lightly toasted.

            Assemble the Burgers: Layer fresh spinach leaves on the bottom half of each toasted bun. Place a grilled Portobello mushroom on top, followed by slices of tomato, red onion, goat cheese (if using), and avocado slices (if using). Add the top bun.
