Ingredients

1.5 lbs beef tenderloin, trimmed

2 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 cup sour cream

2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Zest of 1 lemon

Instructions

Prepare the marinade: In a small bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.

Marinate the tenderloin: Rub the marinade evenly over the beef tenderloin, ensuring all sides are coated. Cover it with plastic wrap and let it marinate in the refrigerator for at least 1 hour (or overnight for a deeper flavor).

Create the creamy dill sauce: In another bowl, mix together the sour cream, fresh dill, lemon juice, Dijon mustard, and lemon zest. Stir well until all ingredients are fully incorporated. Adjust seasoning with salt and pepper to taste. Refrigerate until ready to serve.

Preheat your grill: Heat the grill to medium-high heat (about 400°F/200°C). Ensure the grates are clean and well oiled to prevent sticking.

Grill the tenderloin: Remove the tenderloin from the marinade and let any excess drip off. Place it on the grill and cook for about 6-8 minutes per side for medium-rare, or until it reaches your desired doneness (internal temperature should be 135°F/57°C for medium-rare).

Rest the meat: Once grilled to your liking, remove the tenderloin from the grill and let it rest for 10 minutes. This step helps the juices redistribute within the meat, keeping it flavorful and tender.

Serve: Slice the rested tenderloin into medallions and plate them up. Drizzle the creamy dill sauce generously over the slices or serve it on the side for dipping.

Garnish and enjoy: Garnish with additional fresh dill if desired, and serve alongside your favorite sides such as grilled vegetables or a fresh salad.
