4 boneless, skinless chicken breasts

1 ripe pineapple, peeled, cored, and cut into rings

1 bell pepper (red or yellow), sliced

1 tablespoon ginger, minced

2 cloves garlic, minced

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon honey

1 tablespoon sesame oil

1 teaspoon chili flakes (optional, for heat)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Cooked rice or quinoa, for serving

Instructions
 

Marinate the Chicken: In a bowl, whisk together soy sauce, brown sugar, honey, sesame oil, ginger, garlic, and chili flakes if using. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.

    Prepare the Pineapple: While the chicken is marinating, preheat your grill or a grill pan over medium heat. Lightly brush pineapple rings with olive oil and sprinkle with a little salt. Set aside.

      Cook the Chicken: Heat the grill or grill pan. Remove the chicken from the marinade (reserve the marinade for later). Place the chicken on the grill and cook for about 6-7 minutes on each side, until the internal temperature reaches 165°F (74°C) and the chicken is nicely browned.

        Grill the Pineapple and Bell Pepper: While the chicken is cooking, add the pineapple rings and sliced bell pepper to the grill. Grill for about 3-5 minutes per side, or until they have grill marks and are slightly caramelized.

          Add Sauce to Chicken: Once the chicken is almost done, pour the reserved marinade over the chicken on the grill. Allow it to bubble and glaze the chicken for the last 2-3 minutes of cooking.

            Serve: Remove grilled chicken, pineapple, and bell pepper from the grill. Slice the chicken into strips and arrange it on a platter. Top with grilled pineapple and bell pepper, and garnish with fresh cilantro or parsley.

              Enjoy: Serve hot over a bed of cooked rice or quinoa, drizzling any remaining glaze from the grill over the top for extra flavor.
