1 lb boneless, skinless chicken thighs

2 tbsp olive oil

1 cup Hatch green chilies, roasted and chopped

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

12 mini corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup crumbled queso fresco

Fresh cilantro leaves for garnish

Lime wedges for serving

Prepare the Chicken: In a large mixing bowl, combine the chicken thighs with olive oil, roasted Hatch green chilies, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well to coat the chicken evenly.
