1 lb ground turkey

1 cup cooked jasmine rice

1 cup Hatch green chiles, roasted and chopped (fresh or canned)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp paprika

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

1 cup shredded cheddar cheese (or a cheese of your choice)

4 large tortillas (whole wheat or flour)

1 cup fresh spinach leaves

1/2 cup Greek yogurt or sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cooking the Turkey Mixture:

    - In a large skillet, heat a small amount of oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-5 minutes.

      - Add the minced garlic and cook for an additional 1 minute, stirring frequently.

        - Remove the skillet from the heat, then add the ground turkey, cumin, paprika, salt, and black pepper. Return the skillet to medium heat.

          - Cook until the turkey is browned and cooked through, breaking it up with a spoon, about 7-10 minutes.

            Add the Chiles and Rice:

              - Stir the chopped Hatch chiles into the turkey mixture, followed by the cooked jasmine rice. Mix everything thoroughly and heat for another 2-3 minutes until warmed through. Remove from heat.

                Assemble the Wraps:

                  - Lay a tortilla flat on a clean surface. Place a handful of fresh spinach leaves in the center, followed by a generous scoop of the turkey and rice mixture.

                    - Top with a sprinkle of shredded cheddar cheese.

                      - Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top to form a wrap. Repeat with the remaining tortillas.
