2 cups rolled oats

1 cup mashed ripe bananas (about 2 large bananas)

1 cup unsweetened applesauce

1/2 cup almond butter (or any nut/seed butter of your choice)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 1/2 cups fresh or frozen blueberries

Optional: 1/4 cup chopped nuts (walnuts or almonds) or seeds (chia or flaxseed) for added crunch

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal of the bars.

    In a large mixing bowl, combine the rolled oats, mashed bananas, unsweetened applesauce, almond butter, honey (or maple syrup), and vanilla extract. Stir until everything is well combined and forms a sticky mixture.

      Add the dry ingredients to the mixture: baking powder, cinnamon, and salt. Stir until evenly mixed.

        Gently fold in the blueberries and nuts/seeds (if using) until evenly distributed throughout the mixture.

          Pour the oat mixture into the prepared baking pan, spreading it evenly and pressing it down firmly with a spatula or the back of a spoon.

            Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown and the center is set. A toothpick inserted in the middle should come out clean.

              Allow the bars to cool in the pan for 10-15 minutes, then lift them out using the parchment overhang and let them cool completely on a wire rack before cutting into squares or bars.

                Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks. These bars also freeze well for up to 3 months!
