2 large eggs

1/3 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted (or any neutral oil)

1 teaspoon vanilla extract

1 1/2 cups grated carrots (about 3 medium carrots)

1/2 cup raisins or walnuts (optional)

1/4 cup chopped pecans for topping (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it to prevent sticking.

    Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.

      Prepare Wet Ingredients: In a separate bowl, beat the eggs. Add the honey (or maple syrup), applesauce, melted coconut oil, and vanilla extract. Whisk until smooth.
