Healthy Chicken Taco Casserole

1 lb boneless, skinless chicken breast, diced

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (red or green), chopped

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 can (14.5 oz) diced tomatoes with green chiles

1 packet (1 oz) taco seasoning (or homemade)

Salt and pepper to taste

1 teaspoon cumin

1 cup low-fat Greek yogurt (for topping)

1 cup shredded low-fat cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped (for garnish)

6 whole wheat tortillas, cut into triangles

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Season with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.

      Sauté the Vegetables: Add the chopped onion, minced garlic, and bell pepper to the skillet. Sauté for 3-5 minutes until the vegetables are tender.

        Combine Ingredients: Stir in the black beans, corn, diced tomatoes with green chiles, taco seasoning, and cumin. Mix well and let simmer for 5 minutes. Adjust seasoning if needed.

          Layer the Casserole: In a greased 9x13 inch baking dish, layer half of the tortilla triangles at the bottom. Pour half of the chicken mixture on top. Then layer with half of the Greek yogurt and half of the cheese. Repeat the layers with the remaining tortillas, chicken mixture, yogurt, and cheese to create a second layer.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, sprinkle with fresh cilantro on top. Allow to cool for about 5 minutes before slicing and serving. Enjoy your healthy twist on a classic taco dish!
