Once your cookie dough is ready, the next step involves scooping and shaping to ensure your cookies are uniform and visually appealing. Using a cookie scoop or an ice cream scoop can help you achieve consistent sizes for each cookie, which is crucial for even baking. If you prefer a homemade approach, you can use two spoons to drop the dough onto the baking sheet.

Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or whole wheat flour)

1/4 cup honey or maple syrup

1/4 cup unsweetened peanut butter or almond butter

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/3 cup dark chocolate chips (optional, for sweetness)

1/4 cup chopped nuts (e.g., walnuts or pecans) for crunch (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Stir in the honey or maple syrup, peanut butter or almond butter, and vanilla extract until well combined.

Combine Dry Ingredients: In another bowl, combine the rolled oats, almond flour, baking soda, cinnamon, and salt. Mix well to ensure the baking soda is evenly distributed.

Combine Mixtures: Gradually add the dry ingredients to the banana mixture. Stir until incorporated. If you're using chocolate chips, chopped nuts, or dried fruits, fold them into the dough at this point.

Scoop Cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie with the back of the spoon.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden brown.

Cool: Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Then transfer them to a wire rack to cool completely.

Enjoy: Once cooled, these cookies are ready to be enjoyed! Store any leftovers in an airtight container for up to a week.
