4 medium zucchinis, sliced into half-moons

3 tablespoons extra-virgin olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

1 teaspoon fresh basil, chopped (or 1/2 teaspoon dried basil)

1 teaspoon fresh oregano, chopped (or 1/2 teaspoon dried oregano)

Salt and pepper to taste

Zest of 1 lemon

Juice of 1 lemon

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Prepare the Ingredients: Wash and slice the zucchinis into half-moons, mince the garlic, and chop the fresh herbs. Set aside.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat until shimmering.

      Sauté the Garlic: Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant. Be careful not to burn it!

        Add the Zucchini: Toss in the sliced zucchini to the skillet. Stir well to coat the zucchini in the garlic-infused oil.

          Cook the Zucchini: Sauté the zucchini for about 5-7 minutes, stirring occasionally, until they are tender but still slightly crisp.

            Season: Sprinkle in the chopped thyme, basil, and oregano. Add salt and pepper to taste. Stir well to combine.

              Finish with Lemon: Remove the skillet from heat. Add the lemon zest and lemon juice, stirring to combine. For an extra touch of flavor, you can stir in the grated Parmesan at this stage if using.

                Garnish: Transfer the sautéed zucchini to a serving plate and sprinkle with fresh parsley for garnish.
