1 pound ground turkey (lean)

2 medium sweet potatoes, peeled and diced into small cubes

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup spinach (fresh or frozen)

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Sriracha or hot sauce for serving

Instructions
 

Prep the Ingredients: Start by peeling and dicing the sweet potatoes. Dice the red bell pepper and onion, and mince the garlic.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Cook for about 10–12 minutes, stirring occasionally, until they are tender and begin to brown. If needed, add a splash of water to help steam them.

      Sauté the Vegetables: Once the sweet potatoes are cooked, push them to one side of the skillet. Add the remaining tablespoon of olive oil to the empty side of the skillet, and sauté the chopped onion and red bell pepper for about 3–4 minutes until they start to soften. Stir in the minced garlic and cook for another minute until fragrant.

        Brown the Ground Turkey: Move the veggies to the side and add the ground turkey to the skillet. Break it up with a spatula and cook until browned and no longer pink, about 5–7 minutes.

          Season the Mixture: Once the turkey is cooked, sprinkle in the smoked paprika, cumin, salt, and black pepper. Mix everything together until well combined.

            Add Spinach: If using fresh spinach, add it to the skillet and let it wilt down, stirring for about 2–3 minutes. If using frozen spinach, ensure it’s thawed and drained before adding it.

              Combine and Serve: Thoroughly mix all ingredients together in the skillet, allowing the flavors to meld for another 2 minutes. Adjust seasoning if needed.

                Garnish and Enjoy: Remove from heat and garnish with chopped fresh parsley. Serve warm, drizzling with Sriracha or hot sauce if desired.
