Hearty Beef Barley Soup

1 pound beef stew meat, cut into 1-inch cubes

2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup mushrooms, sliced

1 cup pearl barley, rinsed

8 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

2 bay leaves

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions
 

Brown the Beef: In a large pot or Dutch oven, heat olive oil over medium heat. Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables: In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic, carrots, celery, and mushrooms, cooking for an additional 5 minutes until the vegetables begin to soften.

      Combine Ingredients: Return the browned beef to the pot. Add the rinsed pearl barley, beef broth, diced tomatoes (with juices), bay leaves, thyme, and rosemary. Stir everything together well.

        Simmer the Soup: Bring the mixture to a boil, then reduce heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked.

          Season and Serve: After simmering, remove the bay leaves. Taste the soup and adjust seasoning with salt and pepper as desired. If desired, garnish with fresh parsley before serving.
