For the Dough:

4 cups all-purpose flour

1 packet (2 ¼ tsp) instant yeast

½ cup warm milk (110°F or 43°C)

½ cup warm water (110°F or 43°C)

¼ cup granulated sugar

½ cup unsalted butter, melted

2 large eggs

1 tsp salt

For the Herb & Garlic Filling:

½ cup unsalted butter, softened

4 cloves garlic, minced

1 cup fresh mixed herbs (parsley, basil, and chives), finely chopped

1 tsp onion powder

1 tsp salt

½ tsp black pepper

1 cup shredded mozzarella cheese (optional)

For the Topping:

2 tbsp melted butter

1 tbsp fresh herbs, chopped, for garnish (optional)

Instructions
 

Prepare the Dough: In a large mixing bowl, combine the warm milk, warm water, and sugar. Sprinkle the instant yeast on top and let it sit for about 5 minutes, or until it becomes frothy.

    Mix the Wet Ingredients: Once frothy, add the melted butter and eggs into the yeast mixture. Whisk until well combined.

      Combine Dry Ingredients: In another bowl, mix the flour and salt. Gradually add the flour mixture to the wet ingredients, stirring with a wooden spoon until a dough forms.

        Knead the Dough: Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes, until it becomes smooth and elastic.

          First Rise: Place the kneaded dough in a greased bowl, cover with a clean kitchen towel, and allow it to rise in a warm area for about 1 hour, or until it has doubled in size.

            Prepare the Filling: In a small bowl, mix together the softened butter, minced garlic, chopped herbs, onion powder, salt, and black pepper until well combined.

              Roll Out the Dough: After the dough has risen, punch it down and turn it onto a lightly floured surface. Roll out the dough into a rectangle, about 16x12 inches.

                Spread the Filling: Evenly spread the herb & garlic mixture over the rolled-out dough. Sprinkle with shredded mozzarella cheese if using.

                  Shape into Rolls: Starting from the long edge, carefully roll the dough tightly into a log. Pinch the seams to seal.

                    Cut the Rolls: Slice the log into 12 equal pieces (about 1-1.5 inches each). Place the rolls cut-side up into a greased 9x13 inch baking dish.

                      Second Rise: Cover the dish with a kitchen towel and let the rolls rise in a warm spot for another 30-40 minutes, or until puffy.

                        Preheat the Oven: Preheat your oven to 350°F (175°C).

                          Bake the Rolls: Once the rolls have risen, brush the tops with melted butter. Bake in the preheated oven for 20-25 minutes, or until golden brown.

                            Garnish & Serve: Remove from the oven, brush again with melted butter, and sprinkle with fresh herbs if desired. Let them cool for 5-10 minutes before serving.
