Ingredients

1 cup (2 sticks) unsalted butter, softened

2/3 cup powdered sugar

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 tablespoon fresh thyme leaves (chopped)

1/4 teaspoon salt

2 cups all-purpose flour

1/4 cup cornstarch

Optional: additional powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.

Add Flavorings: Mix in the lemon zest, lemon juice, chopped thyme, and salt into the butter mixture. Combine until well incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and cornstarch.

Mix Together: Gradually add the flour mixture to the butter mixture, mixing until a soft dough forms. Be careful not to overmix.

Shape the Dough: Turn the dough out onto a floured surface and gently knead it a few times to bring it together. You can either roll the dough into a log shape for sliceable cookies or flatten it into a disk and cut it into wedges or shapes.

Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.

Cut and Bake: If you rolled it into a log, slice the dough into 1/4-inch thick rounds. Place them on the prepared baking sheet, spacing them about 1 inch apart. If cut into shapes, arrange them similarly.

Bake: Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

Cool and Dust: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Once completely cooled, dust with additional powdered sugar if desired.

Serve and Enjoy: Pair with a cup of tea or coffee, and enjoy the delightful blend of herbal lemon flavor in your shortbread!
