High Protein Blueberry Cottage Cheese Muffins

1 cup cottage cheese (low-fat or regular)

2 large eggs

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup whole wheat flour

1/2 cup rolled oats

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup fresh or frozen blueberries (if using frozen, no need to thaw)

1/4 cup chopped nuts (optional, such as walnuts or almonds)

1 tablespoon lemon zest (optional, for an extra zing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Whisk the mixture until smooth and well-blended.

      Combine Dry Ingredients: In another bowl, mix the whole wheat flour, rolled oats, baking powder, baking soda, salt, and cinnamon until fully incorporated.

        Blend Together: Gradually add the dry mixture to the wet ingredients. Stir gently until just combined; do not overmix. The batter may be slightly lumpy, which is perfectly fine.

          Fold in Blueberries: Carefully fold in the blueberries, nuts (if using), and lemon zest (if using). Make sure the blueberries are evenly distributed throughout the batter.

            Fill Muffin Tin: Evenly distribute the muffin batter into the prepared muffin tins, filling each cup about 3/4 full.

              Bake: Place the muffin tray in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool and Enjoy: Remove the muffins from the oven and allow them to cool down in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm!
