1 lb ground beef

1 medium onion, diced

2 cups diced potatoes (about 2 medium potatoes)

1 can (15 oz) green beans, drained

1 can (15 oz) diced tomatoes (with juice)

1 cup shredded cheddar cheese

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    Cook the beef and onions: In a large skillet, heat the olive oil over medium heat. Add the ground beef and diced onions, cooking until the meat is browned and the onions are softened (approx. 5–7 minutes). Drain any excess fat.

      Season the mixture: Stir in garlic powder, paprika, salt, and pepper, combining well. Cook for another 2 minutes to enhance the flavors.

        Layer the casserole: In a large baking dish, start layering your ingredients. First, spread the cooked beef and onion mixture evenly over the bottom. Follow with the diced potatoes, then pour in the can of diced tomatoes (with all juices) on top, and finally add the drained green beans.

          Add cheese: Sprinkle the shredded cheddar cheese evenly over the top layer of green beans.

            Cover and bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 minutes.

              Uncover and finish baking: After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and slightly golden.

                Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired, then scoop and serve hot.
