Ingredients

2 lbs boneless turkey breast

1 cup crumbled feta cheese

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped

1/4 cup pine nuts, toasted

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

1 cup low-sodium chicken broth

Kitchen twine (for tying)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). This ensures the turkey gets that perfect golden brown finish.

Prepare the Stuffing: In a large mixing bowl, combine the crumbled feta cheese, chopped spinach, sun-dried tomatoes, and toasted pine nuts. Add the minced garlic, fresh herbs (rosemary, thyme, parsley), salt, and black pepper. Mix everything together until thoroughly combined.

Prepare the Turkey Breast: Lay the boneless turkey breast flat on a cutting board. Carefully slice it open lengthwise, creating a pocket for the stuffing. Be careful not to cut all the way through the turkey.

Stuff the Turkey: Spoon the feta and herb mixture into the pocket of the turkey breast, pressing it gently to pack it in without spilling out.

Tie the Turkey: Once stuffed, fold the turkey back over to enclose the filling, then use kitchen twine to tie it closed securely. This helps maintain its shape and keeps the stuffing inside during cooking.

Sear the Turkey: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Sear the stuffed turkey breast on all sides until golden brown, about 3-4 minutes per side.

Roast in the Oven: Once browned, carefully pour the chicken broth into the skillet and transfer it to the preheated oven. Roast for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).

Rest the Turkey: Once cooked, remove the turkey from the oven and let it rest for about 10 minutes. This step allows the juices to redistribute, ensuring a moist finish.

Slice and Serve: Carefully remove the kitchen twine and slice the stuffed turkey breast into thick pieces. Serve warm, drizzled with some of the pan sauce from the skillet.
