Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon soy sauce

1 tablespoon rice wine or sherry

1 teaspoon cornstarch

For the Breading:

½ cup all-purpose flour

½ cup cornstarch

1 teaspoon baking powder

Salt and pepper to taste

Oil for frying

For the Stir-Fry Sauce:

¼ cup soy sauce

¼ cup chicken broth

3 tablespoons sugar (brown sugar for a richer flavor)

2 tablespoons rice vinegar

1 tablespoon chili paste (adjust for spiciness)

1 teaspoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, minced

1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)

For Garnish:

2 green onions, chopped

Sesame seeds

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, rice wine, and cornstarch. Mix well and let it marinate for at least 30 minutes.

Prepare the Breading: In a separate bowl, combine the all-purpose flour, cornstarch, baking powder, and a pinch of salt and pepper. Mix well.

Coat the Chicken: Heat oil (about 1-2 inches deep) in a large pot or deep-fryer to 350°F (175°C). While the oil is heating, coat the marinated chicken pieces in the flour-cornstarch mixture, ensuring they are evenly coated.

Fry the Chicken: Working in batches, carefully lower the coated chicken pieces into the hot oil. Fry for approximately 4-5 minutes or until they are golden brown and crispy. Use a slotted spoon to transfer the fried chicken to a paper towel-lined plate to drain excess oil.

Make the Stir-Fry Sauce: In a small saucepan, combine the soy sauce, chicken broth, sugar, rice vinegar, chili paste, sesame oil, garlic, and ginger. Bring the mixture to a simmer over medium heat. Once it simmers, stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.

Combine Chicken and Sauce: In a large skillet or wok over medium-high heat, add the fried chicken and pour the stir-fry sauce over it. Toss until the chicken is well-coated and heated through, about 2-3 minutes.

Serve: Transfer the General Tso's Chicken to a serving dish. Garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or with stir-fried vegetables.
