Homemade Strawberry Pop Tarts

For the dough:

2 ½ cups all-purpose flour

1 tablespoon granulated sugar

½ teaspoon salt

1 cup unsalted butter, cold and cubed

6-8 tablespoons ice water

For the filling:

1 cup fresh strawberries, hulled and diced

½ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the icing:

1 cup powdered sugar

2 tablespoons milk or cream

½ teaspoon vanilla extract

Optional: Sprinkles for decoration

Instructions
 

Make the Dough:

    In a large mixing bowl, whisk together the flour, sugar, and salt. Add the cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Gradually mix in the ice water, one tablespoon at a time, until the dough holds together. Split the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

      Prepare the Filling:

        In a medium saucepan over medium heat, combine the diced strawberries, sugar, lemon juice, cornstarch, and vanilla extract. Cook for about 5-7 minutes, stirring frequently, until the strawberries have softened and the mixture thickens. Remove from heat and let it cool completely.

          Roll out the Dough:

            Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one dough disc to about ¼ inch thick. Cut out rectangles (approximately 3x4 inches) using a sharp knife or pizza cutter. Repeat this with the second disc.

              Assemble the Pop Tarts:

                Lay half of the rectangles on a baking sheet lined with parchment paper. Spoon 1-2 tablespoons of the cooled strawberry filling onto each rectangle, leaving a small border around the edges. Top with the remaining rectangles and gently press to seal the edges. Use a fork to crimp the edges and poke a few holes on top for steam to escape.

                  Bake:

                    Bake in the preheated oven for 20-25 minutes or until golden brown. Remove from the oven and allow to cool on a wire rack.

                      Make the Icing:

                        In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth. If desired, add a touch more milk for a thinner consistency.

                          Ice and Decorate:

                            Once the pop tarts are completely cooled, drizzle the icing over the tops. Add sprinkles if desired, and let the icing set for a few minutes.
