Homestyle Chicken and Rice Casserole

2 cups cooked white rice

2 cups cooked, shredded chicken (rotisserie or homemade)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup shredded sharp cheddar cheese

½ cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or butter (for sautéing)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Aromatics: In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant, about 4-5 minutes.

      Mix Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, sour cream, chicken broth, frozen mixed vegetables, sautéed onions and garlic, onion powder, garlic powder, thyme, salt, and pepper. Mix until all ingredients are well-combined.

        Prepare Baking Dish: Grease a 9x13 inch casserole dish with cooking spray or a thin layer of olive oil. Pour the chicken and rice mixture into the prepared dish, spreading it out evenly.

          Cheesy Layer: Sprinkle the shredded cheddar cheese evenly over the top of the casserole. If you like a crunchy topping, you can mix breadcrumbs with a little melted butter and sprinkle them on top as well.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Cool and Serve: Once baked, let the casserole cool for about 5 minutes before serving. Garnish with fresh parsley or green onions, if desired.
