2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 (28 oz) can crushed tomatoes

3 cups vegetable broth (or chicken broth)

1 teaspoon sugar

Salt and pepper, to taste

1 cup heavy cream

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

1 teaspoon balsamic vinegar (optional)

Fresh basil leaves, for garnish

Crusty bread or grilled cheese, for serving (optional)

Instructions
 

Sauté the Veggies: In a large pot over medium heat, add the olive oil. Once hot, stir in the diced onions, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until softened and fragrant.

    Add the Tomatoes: Pour in the crushed tomatoes and vegetable broth. Stir well to combine. Add the sugar to balance the acidity of the tomatoes, and season with salt and pepper. Bring the mixture to a gentle simmer.

      Simmer: Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes. This will allow the flavors to meld beautifully.

        Blend Until Smooth: After simmering, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a standard blender, then return it to the pot.

          Make it Creamy: Stir in the heavy cream and chopped basil. If you prefer a deeper flavor, add the balsamic vinegar at this stage. Bring the soup back to a low simmer for an additional 5 minutes.

            Taste and Adjust: Taste the soup and adjust seasoning with more salt, pepper, or sugar if needed. The seasoning should be balanced and inviting.
