8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole milk recommended)

1 cup frozen peas, thawed

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

1/2 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbly and golden. Gradually pour in the milk while whisking continuously to avoid lumps. Continue to whisk until the mixture thickens and starts to bubble, about 5-7 minutes.

      Add the Cheese: Reduce the heat to low and stir in the sharp cheddar, mozzarella, and Parmesan cheese. Mix until the cheese is completely melted and the sauce is smooth. Season with garlic powder, onion powder, smoked paprika, salt, and pepper to taste.

        Combine Macaroni and Peas: Fold the cooked macaroni and thawed peas into the cheese sauce, stirring well to coat everything evenly.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Pour the mac and cheese mixture into a greased 9x13 inch baking dish.

            Breadcrumb Topping: In a small bowl, mix the breadcrumbs with a tablespoon of melted butter until evenly coated. Sprinkle this mixture over the mac and cheese for added crunch.

              Bake: Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
