Ingredients

For the Meatloaf:

1 ½ pounds ground beef (80/20)

1 cup breadcrumbs (preferably Italian-seasoned)

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg, beaten

½ cup milk

2 tablespoons Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon dried oregano

½ cup ketchup (for glaze)

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and cubed

4 tablespoons unsalted butter

½ cup milk (adjust for desired creaminess)

Salt and pepper to taste

Optional: Fresh chives, chopped (for garnish)

Instructions

Prepare the Meatloaf:

    - Preheat your oven to 350°F (175°C).

      - In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, beaten egg, milk, Worcestershire sauce, salt, black pepper, thyme, and oregano. Mix until just combined—do not overmix.

        - Shape the mixture into a loaf (about 9x5 inches) and place it in a greased baking dish or on a lined baking sheet.

          - Spread ketchup evenly over the top of the meatloaf for a flavorful glaze.

            Bake the Meatloaf:

              - Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).

                - Once done, let it rest for 10-15 minutes before slicing to retain moisture.

                  Prepare the Mashed Potatoes:

                    - While the meatloaf is baking, place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.

                      - Bring to a boil over high heat, then reduce to a simmer for 15-20 minutes or until the potatoes are fork-tender.

                        - Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.

                          Serve:

                            - Slice the meatloaf and serve it on a plate with a generous scoop of creamy mashed potatoes beside it. Drizzle any remaining meatloaf juices over the potatoes for extra flavor, and garnish with chopped chives if desired.
