Ingredients

For the Filling:

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 cup peas (fresh or frozen)

1 cup corn kernels (fresh, frozen, or canned)

1 cup vegetable broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

For the Mashed Potatoes:

4 large russet potatoes, peeled and cubed

4 tablespoons unsalted butter

1/2 cup milk (or heavy cream for a richer taste)

Salt and pepper to taste

Instructions

Prepare the Mashed Potatoes:

    - In a large pot, place the cubed potatoes and cover them with cold water. Add a pinch of salt. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.

      - Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until creamy and smooth. Set aside.

        Cook the Filling:

          - In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until onions are translucent.

            - Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and fully cooked, about 5-7 minutes.

              - Stir in the carrots, peas, and corn. Cook for another 2-3 minutes.

                - Add the vegetable broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir well and bring to a gentle simmer for about 10 minutes, allowing the flavors to meld and the mixture to thicken slightly.

                  Assemble the Shepherd's Pie:

                    - Preheat your oven to 400°F (200°C).

                      - In a baking dish (about 9x13 inches), spread the turkey and vegetable mixture evenly across the bottom.

                        - Top the filling with the mashed potatoes, smoothing it out to cover completely. You can use a fork to create decorative swirls on the surface if desired.

                          Bake:

                            - Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown and the filling is bubbling around the edges.

                              Serve:

                                - Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.

Enjoy your hearty, homestyle turkey and vegetable shepherd's pie—a delightful dish that warms the soul!
