For the Meatloaf:

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (plain or seasoned)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (or 2 tbsp dried parsley)

1/4 cup finely chopped onion

1 clove garlic, minced

1 large egg

1 tsp salt

1/2 tsp black pepper

1 tsp dried Italian herbs (oregano, basil, thyme)

For the Honey Garlic Glaze:

1/4 cup honey

3 tbsp soy sauce

1 tbsp apple cider vinegar (or rice vinegar)

1 clove garlic, minced

1 tsp fresh ginger, grated (or 1/4 tsp ground ginger)

Pinch of red pepper flakes (optional for heat)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with muffin liners or lightly grease with cooking spray.

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, onion, minced garlic, egg, salt, pepper, and dried Italian herbs. Mix well until all ingredients are thoroughly combined.

      Shape the Meatloaf Minis: Using 1/4 cup of the meat mixture for each mini loaf, shape them into small loaves and place them in the prepared muffin tin. Ensure that they are packed firmly but not overly compressed.

        Make the Honey Garlic Glaze: In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, minced garlic, ginger, and red pepper flakes (if using) until well combined.

          Glaze the Meatloaf Minis: Brush the honey garlic glaze generously over each meatloaf mini, reserving some for later application.

            Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes or until the internal temperature of the meatloaf minis reaches 160°F (70°C).

              Add More Glaze: About 5 minutes before the minis are done, remove them from the oven and brush with any reserved glaze, then return to the oven to finish cooking.

                Cool and Serve: Once baked, remove the mini meatloaves from the oven and let them cool in the tin for a few minutes before transferring to a serving platter. Optionally, drizzle with additional honey and garnish with fresh parsley.
