Honey Lime Chicken Fajitas

1 lb (450g) chicken breast, thinly sliced

2 tablespoons honey

2 tablespoons fresh lime juice (about 1 lime)

1 teaspoon lime zest

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

8 small flour or corn tortillas

Fresh cilantro, for garnish

Optional toppings: diced avocado, sour cream, and lime wedges

Instructions
 

Marinate the Chicken: In a medium bowl, combine the honey, lime juice, lime zest, olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Add the sliced chicken breast and toss until all pieces are well coated. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator for enhanced flavor.

    Prepare the Vegetables: While the chicken is marinating, slice the red and green bell peppers and onion. Set aside.

      Cook the Chicken: In a large skillet or frying pan over medium-high heat, add a little olive oil. Once hot, add the marinated chicken. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

        Cook the Vegetables: In the same skillet, add a touch more olive oil if necessary. Add the sliced bell peppers and onion. Sauté for about 5-8 minutes, or until the vegetables are tender and slightly caramelized.

          Combine: Return the cooked chicken to the skillet with the vegetables. Stir well to combine and heat through for an additional 1-2 minutes. Taste and adjust seasoning, if necessary.

            Serve: Warm the tortillas in a separate skillet or microwave. Serve the honey lime chicken and vegetable mixture right off the skillet, garnished with fresh cilantro and optional toppings such as diced avocado, sour cream, and lime wedges.
