Hot Honey Chicken Biscuits

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

1 pound chicken thighs, boneless and skinless

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup hot honey (store-bought or homemade)

1 tablespoon apple cider vinegar

2 tablespoons honey (for drizzling)

Fresh parsley, chopped (optional, for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Make the Biscuit Dough: In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix well. Add the cold, cubed butter and use your fingers or a pastry cutter to incorporate until the mixture resembles coarse crumbs. Gradually pour in the buttermilk and mix until just combined. Do not overmix. Turn the dough out onto a floured surface and knead gently until it comes together.

      Shape the Biscuits: Roll the dough to about 1-inch thick and cut out biscuits using a round cutter. Place the biscuits on a parchment-lined baking sheet.

        Bake the Biscuits: Bake in the preheated oven for 12-15 minutes or until they are golden brown. Remove from the oven and set aside.

          Prepare the Chicken: While the biscuits are baking, season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a skillet over medium-high heat and add a tablespoon of oil. Cook the chicken thighs for about 6-7 minutes on each side or until they are golden brown and cooked through (internal temperature of 165°F or 75°C). Remove from the skillet and let them rest.

            Make the Hot Honey Sauce: In the same skillet, reduce the heat to low. Add the hot honey and apple cider vinegar. Stir to combine and heat gently until warmed through, about 2-3 minutes.

              Assemble the Biscuits: Slice the biscuits in half. Add a piece of chicken to the bottom half of each biscuit. Drizzle with the hot honey sauce and top with the biscuit tops.

                Garnish and Serve: If desired, drizzle a little more honey over the biscuits and sprinkle with fresh parsley for garnish. Serve immediately, and enjoy this sweet and spicy delight!
