1 lb ground beef (or a mix of ground beef and pork)

1/2 cup panko breadcrumbs

1/4 cup green onions, finely sliced

4 cloves garlic, minced

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon Gochujang (Korean red chili paste)

1 teaspoon grated fresh ginger

1 egg

Salt and pepper to taste

Sesame seeds for garnish

Chopped cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, panko breadcrumbs, green onions, minced garlic, soy sauce, brown sugar, sesame oil, rice vinegar, Gochujang, grated ginger, and the egg. Sprinkle with salt and pepper to taste.

      Mix Thoroughly: Using your hands or a spatula, mix the ingredients until well combined. Be careful not to over-mix, as that can make the meatballs tough.

        Form the Meatballs: With your hands, scoop out about 1.5 tablespoons of the mixture and roll it into a ball. Place the shaped meatballs onto the prepared baking sheet. Repeat until all the mixture is used.

          Bake the Meatballs: Bake for 20-25 minutes or until the meatballs are cooked through and have a nice golden-brown color. You can flip them halfway through for even cooking.

            Prepare the Glaze (optional): In a small saucepan, combine an additional tablespoon of soy sauce, a tablespoon of brown sugar, and a teaspoon of Gochujang. Heat over medium until the sugar dissolves and the sauce thickens slightly. Brush this glaze over the meatballs in the last 5 minutes of cooking for an extra flavor boost.

              Garnish and Serve: Once the meatballs are fully cooked, remove them from the oven. Spritz with sesame seeds and cilantro (if using) before serving.
