2 cups chopped romaine lettuce

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1 cup bell peppers (mixed colors), chopped

1 cup sliced pepperoncini

1 cup provolone cheese, diced

1/2 cup salami, thinly sliced and quartered

1/2 cup pepperoni, thinly sliced and quartered

1/4 cup black olives, pitted and sliced

1/4 cup Italian dressing (store-bought or homemade)

1/4 cup extra virgin olive oil

1 tbsp red wine vinegar

Salt and pepper to taste

Fresh oregano or parsley for garnish (optional)

Instructions
 

In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, and red onion. Mix gently to combine the base ingredients.

    Add the chopped bell peppers, pepperoncini, provolone cheese, salami, pepperoni, and black olives to the salad bowl. Toss the mixture carefully to ensure all the ingredients are evenly distributed.

      In a separate bowl, whisk together the Italian dressing, extra virgin olive oil, red wine vinegar, and a pinch of salt and pepper to taste until well blended.

        Drizzle the dressing over the salad and toss lightly until all components are coated in the dressing.

          Taste the salad, adjusting seasoning with more salt, pepper, or dressing if desired.
