Jalapeño Popper Potato Casserole

3 lbs russet potatoes, peeled and diced

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1-2 fresh jalapeños, diced (seeds removed for less heat)

1/2 cup cooked and crumbled bacon

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper, to taste

1/2 cup green onions, chopped (for garnish)

1/2 cup panko breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15 minutes. Drain and set aside.

      Make the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, 1/2 cup of cheddar cheese, 1/2 cup of pepper jack cheese, diced jalapeños, cooked bacon, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth and well combined.

        Combine Potatoes and Cheese Mixture: Gently fold the cooked potatoes into the cheese mixture until all potatoes are well coated.

          Assemble the Casserole: Grease a 9x13 inch baking dish. Pour the potato and cheese mixture into the dish, smoothing out the top.

            Add Toppings: Sprinkle the remaining cheddar and pepper jack cheese on top. For an added crunch, you can also sprinkle panko breadcrumbs over the cheese layer.

              Bake: Place the casserole in the oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Once baked, remove it from the oven and let it cool for a few minutes. Garnish with chopped green onions before serving.
