Ingredients

1 pound sirloin steak, cut into bite-sized cubes

2 tablespoons olive oil

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Steak: Start by cutting your sirloin steak into bite-sized cubes (about 1-inch pieces). Pat the steak bites dry with paper towels to help them sear better. Season generously with salt, black pepper, and smoked paprika.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it shimmers. Ensure the oil is hot before adding the steak bites to achieve that nice sear.

Sear the Steak Bites: Carefully add the steak cubes to the skillet in a single layer. Cook for about 2-3 minutes without moving them, allowing a crispy crust to form. Then, flip each steak bite and cook for an additional 2-3 minutes for medium-rare, depending on your desired doneness. Do not overcrowd the pan; cook in batches if necessary. Once cooked, remove them from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the unsalted butter. Once it has melted, stir in the minced garlic and thyme. Cook for about 1-2 minutes until the garlic is fragrant but not browned.

Combine: Return the steak bites to the skillet, tossing them in the garlic butter sauce to coat evenly. Cook for another 1-2 minutes to heat through and meld the flavors. Taste and adjust seasoning with more salt and pepper if needed.

Serve: Remove from heat. Garnish with freshly chopped parsley for a pop of color. Serve immediately, either on their own or alongside your favorite sides like mashed potatoes or roasted vegetables.
