For the Meatballs:

1 lb (450g) ground beef or ground chicken

1/2 cup breadcrumbs

1/4 cup finely chopped green onions

1/4 cup crushed pineapple, drained (reserve juice)

1/4 cup grated fresh ginger

2 cloves garlic, minced

1 large egg

1 tsp soy sauce

1/2 tsp black pepper

1/2 tsp salt

For the Teriyaki Sauce:

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup honey

1/4 cup reserved pineapple juice

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp cornstarch mixed with 2 tbsp water (slurry)

For Garnish:

Sesame seeds

Additional chopped green onions

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Make the Meatball Mixture: In a large mixing bowl, combine the ground beef or chicken, breadcrumbs, chopped green onions, crushed pineapple, grated ginger, minced garlic, egg, soy sauce, black pepper, and salt. Mix until just combined, being careful not to overmix.

      Form the Meatballs: Using your hands, form the mixture into 1 to 1.5-inch meatballs and place them on the prepared baking sheet.

        Bake the Meatballs: Bake in the preheated oven for about 20 minutes, or until the meatballs are cooked through and browned.
