4 large whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup finely chopped mixed vegetables (e.g., bell peppers, spinach, corn, and zucchini)

1/2 cup black beans, rinsed and drained

1 teaspoon olive oil (for cooking)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Optional: Sour cream or guacamole for dipping

Prepare the Filling: In a mixing bowl, combine the chopped mixed vegetables, black beans, garlic powder, onion powder, salt, and pepper. Mix well.

    Assemble the Quesadillas: Place one whole wheat tortilla on a clean working surface. Sprinkle a generous layer of cheddar cheese onto one half of the tortilla. Divide the vegetable mixture evenly over the cheese layer, then top with mozzarella cheese. Fold the tortilla over to create a half-moon shape. Repeat the process with the remaining tortillas.

      Cook the Quesadillas: Heat a skillet over medium heat and add olive oil. Carefully place one quesadilla in the skillet. Cook for 3-4 minutes on one side until it’s golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula, and cook for an additional 3-4 minutes on the other side.
