Kid-Friendly Taco Stuffed Sweet Potatoes

4 medium sweet potatoes

1 pound ground turkey or beef

1 packet taco seasoning (or homemade blend)

1 cup canned black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup diced tomatoes (preferably fire-roasted)

1 cup shredded cheddar cheese

1 avocado, diced

1 cup lettuce, shredded

½ cup sour cream or Greek yogurt

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Rinse the sweet potatoes thoroughly and pat them dry. Prick each potato with a fork several times, then rub them with a bit of olive oil and sprinkle with salt. Place the sweet potatoes on a baking tray and roast in the oven for about 45-50 minutes, or until tender.

      Cook the Filling: While the sweet potatoes are baking, heat a skillet over medium heat. Add the ground turkey or beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.

        Season the Meat: Sprinkle the taco seasoning over the cooked meat. Add in the black beans, corn, and diced tomatoes. Stir to combine and let it simmer for about 5-7 minutes until heated through. Adjust seasoning with salt and pepper if necessary.

          Assemble the Tacos: Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Slice them down the middle lengthwise (but not all the way through) and gently mash the flesh with a fork.

            Stuff the Potatoes: Spoon the taco filling generously into each sweet potato. Top with shredded cheddar cheese, allowing it to melt slightly.

              Add Toppings: Finish off with diced avocado, shredded lettuce, and a dollop of sour cream or Greek yogurt. Garnish with fresh cilantro.
