4 whole-wheat tortillas

1 cup shredded mozzarella cheese

1/2 cup cooked black beans (rinsed and drained)

1/2 cup corn (canned or frozen)

1/2 cup diced bell peppers (red, green, and yellow for color)

1/2 cup shredded carrots

1/2 cup baby spinach, chopped

1/4 cup finely chopped red onion

1 teaspoon cumin powder

1/2 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Veggies: In a mixing bowl, combine the black beans, corn, bell peppers, carrots, spinach, and red onion. Sprinkle the cumin, paprika, salt, and pepper over the mixture. Stir until all the veggies are well coated with the spices.

    Heat the Skillet: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas: Lay one tortilla flat in the skillet. Sprinkle 1/4 cup of mozzarella cheese evenly over half of the tortilla. Spoon a generous amount of the veggie mixture over the cheese, then top with another 1/4 cup of cheese. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side until the bottom is golden brown and the cheese is starting to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side until golden and crispy.

          Repeat for Remaining Quesadillas: Remove the cooked quesadilla from the skillet and place it on a cutting board. Cut into wedges. Repeat the process with the remaining tortillas, adding more olive oil to the skillet as needed.
