Ingredients

For the Meatballs:

1 lb ground beef or a mix of beef and pork

1/2 cup panko breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 teaspoon gochujang (Korean red chili paste)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 teaspoon lime juice

1 teaspoon honey (optional for sweetness)

1 teaspoon sesame oil

1/2 teaspoon sriracha (adjust to desired heat)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Meatball Mixture: In a large bowl, combine ground beef/pork, panko breadcrumbs, chopped green onions, minced garlic, grated ginger, soy sauce, brown sugar, sesame oil, gochujang, salt, and black pepper. Mix until all ingredients are fully incorporated but try not to over-mix.

Form the Meatballs: Using your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter. Place the meatballs on a baking sheet lined with parchment paper.

Bake the Meatballs: Bake in the preheated oven for 18-20 minutes, or until the meatballs are cooked through and have a slight char on the outside. They should reach an internal temperature of 160°F (70°C).

Prepare the Spicy Mayo Dip: While the meatballs are baking, in a small bowl, whisk together mayonnaise, gochujang, lime juice, honey, sesame oil, and sriracha until smooth. Adjust the spice level based on your preference.

Serve: Once the meatballs are cooked, remove them from the oven and let them rest for a few minutes. Transfer to a serving platter, sprinkle with sesame seeds, and serve alongside the spicy mayo dip.

Enjoy your Firecracker Korean BBQ Meatballs with your guests, and watch them savor each delicious bite!
