Lazy Chicken Parmesan Grilled Cheese

Ingredients
  

2 slices of sourdough bread

1 cup cooked chicken breast, shredded (leftover rotisserie chicken works great!)

1/2 cup marinara sauce

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tablespoons butter

Fresh basil leaves, for garnish (optional)

Prepare the Chicken Mixture: In a medium bowl, mix the shredded chicken with marinara sauce, dried oregano, garlic powder, salt, and pepper. Stir until the chicken is evenly coated.

    Construct the Sandwich: Lay one slice of sourdough bread on a clean cutting board or plate. Top with half of the mozzarella cheese, followed by the chicken mixture, then the remaining mozzarella, and finally the second slice of bread.

      Butter the Bread: Spread about 1 tablespoon of butter on the top slice of bread. Flip the sandwich over and spread the remaining butter on the other side.

        Grill the Sandwich: Heat a skillet or griddle over medium heat. Once hot, place the sandwich in the skillet butter-side down. Grill for about 3-4 minutes, until the bottom is golden brown.

          Flip and Cook: Carefully flip the sandwich using a spatula. Press down gently to ensure it cooks evenly. Grill for another 3-4 minutes, until the other side is golden and the cheese is melted.

            Add Parmesan: Remove the sandwich from the pan, sprinkle the grated Parmesan on top, and let it rest for a minute for the cheese to slightly melt.
