Lemon Basil Couscous with Roasted Chicken

For the Roasted Chicken:

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon garlic powder

1 tablespoon dried oregano

Juice of 1 lemon

Zest of 1 lemon

For the Lemon Basil Couscous:

1 cup couscous

1 ¼ cups chicken broth or water

1 tablespoon olive oil

Zest of 1 lemon

Juice of 1 lemon

1 cup fresh basil leaves, chopped

½ cup cherry tomatoes, halved

½ teaspoon salt

¼ teaspoon black pepper

For Garnish:

Extra basil leaves

Lemon wedges

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, combine olive oil, salt, pepper, garlic powder, oregano, lemon juice, and lemon zest.

        - Add the chicken thighs to the bowl, turning to coat them evenly in the marinade. Let them marinate for at least 15 minutes while you prepare the couscous.

          Roast the Chicken:

            - Place the marinated chicken thighs on a baking sheet, skin-side up.

              - Roast in the preheated oven for 35-40 minutes or until the skin is crispy and the internal temperature reaches 165°F (74°C).

                - Once cooked, remove from the oven and let them rest for about 5 minutes.

                  Prepare the Couscous:

                    - In a saucepan, bring chicken broth (or water) to a boil.

                      - Stir in the couscous and olive oil, cover, and remove from heat. Let it sit for about 5 minutes, or until the couscous has absorbed the liquid.

                        - Fluff the couscous with a fork, then stir in lemon zest, lemon juice, chopped basil, cherry tomatoes, salt, and pepper. Mix well to combine.

                          Serve:

                            - On a large plate, create a bed of lemon basil couscous.

                              - Top with the roasted chicken thighs.

                                - Garnish with extra basil leaves and lemon wedges before serving.
