1 cup rolled oats

1 cup unsweetened almond milk (or any milk of your choice)

1/2 cup Greek yogurt (plain or vanilla)

2 tablespoons maple syrup or honey (adjust to taste)

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 teaspoon vanilla extract

1/2 teaspoon chia seeds (optional, for added fiber)

1 cup fresh blueberries (adjust according to preference)

A pinch of salt

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats, chia seeds (if using), and a pinch of salt. Mix well.

    In a separate bowl, whisk together the almond milk, Greek yogurt, maple syrup (or honey), lemon zest, lemon juice, and vanilla extract until smooth and well combined.
