Ingredients

4 salmon fillets (about 6 ounces each)

4 tablespoons unsalted butter, softened

2 lemons (1 for juice, 1 for slices)

4 cloves garlic, minced

1 teaspoon fresh dill or ½ teaspoon dried dill

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed and cut into 2-inch pieces

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Foil: Cut four large pieces of aluminum foil (about 12x12 inches each) and lay them out on a flat surface.

Make the Lemon Butter Sauce: In a small bowl, combine the softened butter, minced garlic, lemon juice from one lemon, dill, salt, and pepper. Mix until well combined.

        Assemble the Packs:

          - Place a salmon fillet in the center of each piece of foil.

            - Spread a tablespoon of the lemon butter sauce over each fillet.

              - Add an equal portion of cherry tomatoes and asparagus around each salmon fillet.

                - Top with a few slices of lemon and additional salt and pepper if desired.

Seal the Foil Packs: Fold the sides of the foil over the salmon, covering completely, and crimp the edges together to seal tightly (leave a little space inside for steam to build).

Bake: Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Carefully open the foil packs (watch out for steam!) and garnish with fresh parsley. Serve directly in the foil or transfer to plates. Enjoy with extra lemon wedges if desired!
