Ingredients
  

For the Graham Cracker Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

For the Lemon Cream Filling:

1 cup fresh lemon juice (about 4-6 lemons)

Zest of 2 lemons

1 cup granulated sugar

4 large eggs

1/2 cup unsalted butter, cut into pieces

1 cup heavy cream

For Topping:

1 cup whipped cream (store-bought or homemade)

Lemon slices and zest for garnish

Fresh mint leaves (optional)

Instructions
 

Prepare the Graham Cracker Crust:

    - In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are fully coated and resemble wet sand.

      - Press the mixture firmly into the bottom of individual mason jars (about 4-ounce jars work well) to form an even layer. Set aside.

        Make the Lemon Cream Filling:

          - In a saucepan over medium heat, whisk together the fresh lemon juice, lemon zest, and sugar until fully combined.

            - Add in the eggs, whisking continuously to prevent the eggs from scrambling. Stir in the butter pieces gradually until the mixture is smooth and thickened (about 7-10 minutes).

              - Once thick, remove from heat and allow to cool slightly before pouring it into a bowl or another container. Let it chill in the fridge for about 30 minutes.

                Assemble the Jars:

                  - Once the lemon cream filling has chilled, spoon or pipe it on top of the graham cracker crust in each jar, filling them about three-quarters full.

                    - Top with a generous spoonful of whipped cream.

                      Chill and Serve:

                        - Place the jars back into the fridge for at least one hour to set and chill further.

                          - Just before serving, garnish with a slice of lemon, lemon zest, and a sprig of mint for a pop of color and freshness.
