Lemon Dill Salmon Patties

1 lb fresh salmon fillet, skin removed

1 cup breadcrumbs (preferably whole wheat or panko)

2 large eggs, beaten

1/4 cup fresh dill, chopped (or 2 tablespoons dried dill)

1/4 cup green onions, finely chopped

1/4 cup lemon juice (freshly squeezed)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup mayonnaise

1 tablespoon Dijon mustard

Oil for frying (olive oil or vegetable oil)

Prep the Salmon: Place the fresh salmon fillet on a cutting board and use a sharp knife to chop it into small pieces, ensuring there are no small bones left. For a smoother texture, you can also pulse it in a food processor until finely minced, being careful not to over-process.

    Mix the Ingredients: In a large bowl, combine the chopped salmon, breadcrumbs, beaten eggs, fresh dill, green onions, lemon juice, garlic powder, onion powder, salt, and black pepper. Mix everything together gently until just combined; don't over-mix to keep the patties tender.

      Form the Patties: With your hands, form the mixture into about 8 equal-sized patties, pressing them firmly together to ensure they hold shape.

        Chill the Patties: Place the formed patties on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes. This helps them hold together better when frying.

          Prepare the Sauce: In a small bowl, mix the mayonnaise and Dijon mustard together until smooth. Set aside for serving.

            Cook the Patties: Heat a non-stick skillet over medium heat and add enough oil to coat the bottom of the pan. Once the oil is hot, carefully place the patties in the skillet. Cook for 4-5 minutes on each side, or until golden brown and cooked through.

              Serve with Sauce: Once the patties are cooked, remove them from the skillet and place them on a paper towel to drain any excess oil. Serve warm with the mayonnaise-Dijon sauce drizzled on top (or on the side) and garnish with additional dill if desired.
